Pepperoni Pizza Chili

Ingredients:

1 pound ground beef
1 can (16oz.) kidney beans, rinsed and drained
1 can (15oz.) pizza sauce
1 can (14-1/2oz) diced tomatoes, undrained
1 can beef broth (10-1/2oz)
1 can (8oz) tomato sauce
1-1/2 cups water
1 pkg. (3-1/2oz) sliced pepperoni
1/2 cup chopped green pepper
1 tsp. pizza seasoning or Italian seasoning
1 tsp. salt
shredded mozzarella cheese, optional


Directions: In large saucepan, cook beef till no longer pink; drain. Stir in beans, pizza sauce, tomatoes, tomato sauce, water, pepperoni, green pepper, pizza seasoning and salt. Bring to a boil. Reduce heat; simmer, uncovered for 30 mins. or till chili reaches desired thickness. Garnish with cheese if desired. Enjoy

 

BAKED BEANS

Ingredients:

1 qt. northern beans
1/2 cup brown sugar
1 cup white sugar
1 tsp. vinger
2 sm. onions diced
1 tsp . mustard
1/2 cup ketchup
1/2 lb. raw bacon


Directions: Cook in slow cooker at 350 for 3 hours

 

Quick Pasta and Bean Soup

Preparation Time: 45 m inutes

Ingredients:

1/2 cup diced onion
2/3 cup diced celery
1/3 cup parsey
3 Tablespoons Olive Oil
1 can Pork & Beans with liquid
1 cup macaroni or chili mac noodles , cooked
5 cups water
1 cup tomatoes or 1/2 cup tomato sauce
salt & pepper to taste


Directions: Saute onion, celery, parsley in olive oil for 5 minutes. Add 5 cups water, 1 cup tomatoes or sauce, salt and pepper. Bring to boil , add the can of Pork & Beans with the liquid . Simmer for 1/2 hour then add the 1 cup cooked macaroni. Heat through. Serve with parmesan cheese.

 

Broiled Stuffed Mushrooms(Fast and Easy Appetizer)

Ingredients:

12 large mushroom
2 cups finely chopped mushroom stems
1/2 cup finely chopped celery
2 Tbsp. butter or margarine
1/2 tsp. pepper
1/2 tsp. salt
1/2 cup cheese(cheddar or mild)
1 tsp. mayonnaise
1/4 cup fine bread crumbs
1/2 cup finely chopped onion


Directions: Sauté stems, onion and celery in 1 and 1/2 tablespoons butter for 5 minutes. Add salt, pepper and cheese, stir till melted. Remove from heat and add mayonnaise. Melt remaining butter, brush outside of mushrooms. Fill with cooked mixture. Sprinkle with bread crumbs. Place on cookie sheet, iron frypan or in glass casserole dish, broil until bubbly, about 5 minutes or more

 

Tex-Mex Dip (Serve with tortilla chips)

Ingredients:

2 tablespoons lemon juice
21 ounce bean dip; plain or jalepeno
1/2 teaspoon salt
1 cup green onions; chopped
3 avocados, medium size
3 tomatoes; seeded and chopped
1/4 teaspoon pepper
7 ounces olives; chopped
1 cup sour cream
8 ounces sharp cheddar cheese; grated
1/2 cups mayonnaise
1 tortilla chips
1 Taco Seasoning Mix packet


Directions: Peel, pit and mash avocados in medium bowl. Add lemon juice, salt and pepper. In separate bowl, combine sour cream, mayonnaise, and taco seasoning. To assemble, spread bean dip on a large, shallow platter. Top with avocado mixture. Put on sour cream and taco mixture. Sprinkle wit chopped onions, tomatoes, and olives. Cover with shredded cheese.

 

Shrimp and Feta Greek Style Pizza

Ingredients:

1 pound uncooked medium Shrimp
1 tablespoon cornmeal
1 can Pillsbury Pizza dough or homemade dough
4 ounces shredded mozzarella cheese
1 tablespoon olive oil
2 minced garlic cloves
2 1/2 ounces crumbled feta cheese
1/4 cup slice green onions
2 teas. rosemary crushed
2 1/4 ounces can sliced ripe olives


Directions: Shell and devein shrimp and set aside. Heat oven to 425 F. Grease 12" pizza pan or 13x9" pan; sprinkle with cornmeal. Place dough in greased pan; starting at center press out with hands. Sprinkle with mozzarella cheese. Heat olive oil in large skillet over med-high heat. Add shrimp and garlic. Cook until shrimp are light pink, about 1 min., stirring frequently. Spoonover mozzarella cheese. Sprinkle feta cheese, green onions, rosemary and olives over shrimp. Bake at 425 F for 18-22 min., or until crust is golden brown

 

Pepperoni Pizza Dip

Ingredients:

1 pkg 8 oz cream cheese
1/2 cup sour cream
1 tsp oregano
pinch garlic powder
pinch crushed red pepper (optional)
1/2 cup pizza sauce
chopped pepperoni
chopped green pepper
chopped onion
1/2 cup mozzarella cheese


Directions: Beat first 5 ingredients together until smooth. Spread in 9" pie plate. Pour 1/2 cup pizza sauce on top. Sprinkle top with chopped pepperoni, pepper, onion and mozzarella cheese. Bake 10 minutes on 350 degrees or until cheese is melted. Serve with mini bread slices or crackers.

 

Vegetable Pizza

Ingredients:

2-cans pizza crust
2-(8oz.)cream cheese
3/4 cup miracle whip
1 package hidden valley ranch dry dressing
Chopped Vegetables:
onions,celery,carrots,broccoli,cauliflower,peppers,tomatoes
shredded cheddar cheese


Directions: Spread pizza crust on jelly roll pan. Bake at 350 degrees for 10-15 minutes or until golden brown. Mix cream cheese, Miracle Whip and hidden valley ranch dressing together and spread on cooled crust. Layer chopped vegetables and top with cheese. Chill. This recipe may be cut in half for a 9x13 pan instead of a jelly roll pan,

 

Hot Chicken Salad

Ingredients:

2 cups chicken cut up
2 cups chopped celery
1/2 cup toasted almonds chopped
1 teaspoon salt
1 cup Miracle whip salad dressing

Directions: Mix lightly all ingredients. Put in greased dish. Then put 1/4 cup crushed potato chips on top and then 1/2 cup cheddar cheese on top of the chips. Bake at 450 degrees for 15 minutes.Serve on an assortment of crackers. You may also substitute turkey instead of chicken.

 

Hot Bacon Dip

Preparation Time: 10 minutes
Number of Servings: 8-10

Ingredients:

2 - 8oz. cream cheese, softened
1 cup mayonnaise
2 cups mild cheddar cheese, grated
4 green onions, chopped
1 pkg. thick slice bacon, fried and crumbled
1 sleeve Ritz crackers, crushed

Directions: Blend cream cheese and mayonnaise. Stir in cheese, onions, and bacon. Spread in an 11x14 baking dish. Top with crackers and dot with butter. Bake at 350 for 20 minutes or until bubbly. Serve with corn chips.
