Pineapple Gelatin Salad

Nutrition Info: For reduced calories/fat, reduced-fat or fat-free whipped topping and cream cheese or sugar-free gelatin could most likely be substituted.

Ingredients:

20 oz can crushed pineapple, drained, reserving juice
6 oz pkg lemon gelatin
3 c boiling water
8 oz pkg cream cheese, softened
16 oz cont frozen whipped topping, thawed (i.e. Cool Whip)
3/4 c sugar
3 tbsp lemon juice
3 tbsp water
3 tbsp flour
2 egg yolks, lightly beaten


Directions: Dissolve gelatin in boiling water. Add pineapple; pour into 13"x9" baking dish. Chill until partially set (about 45 minutes). In mixing bowl, mix cream cheese with whipped topping; carefully spread over gelatin layer. In saucepan over medium heat, combine reserved pineapple juice and all remaining ingredients. Bring to a boil. Cook and stir 1 minute until thickened. Cool. Spread over cream cheese layer. Chill 1 hour.

 

Strawberry Cheesecake

Nutrition Info: One 10 oz or 16 oz pkg frozen unsweetened strawberries, thawed and pureed, can be substituted for fresh strawberries.

Ingredients:

2 c gingersnap crumbs (about 36) (or vanilla wafer or graham cracker crumbs
1/3 c butter or margarine, melted
4 c strawberries (1-1/4 lb), pureed in blender or food processor
3-8 oz pkgs cream cheese, softened
1 c powdered sugar
1 tsp vanilla
1 env unflavored gelatin
1/3 c cold water
8 oz cont frozen whipped topping, thawed (ie Cool Whip)


Directions: Combine gingersnap crumbs and melted butter; press firmly on bottom of 13"x9" baking dish. Cover and chill. Beat cream cheese, powdered sugar and vanilla until smooth; fold in whipped topping. In small saucepan, sprinkle gelatin over water. Heat on low heat until dissolved, stirring occasionally. Stir in 1-1/4 c of strawberry puree. Fold into cream cheese mixture. Spread over crust. Cover and chill 4 hours. Garnish with remaining whipped topping in rosettes; drizzle with remaining strawberry puree.

 

Cheese Cake

Preparation Time: 1 HOUR
Number of Servings: 8to 12

Ingredients:

1 cup graham cracker crumbs
1/2 c. finely chopped toasted pecans
save 2 Tablespoons of the above.
add to press into buttom of pan
1/4 c melted unsalted butter
3 TABL.sugar
cream together:
7 pkgs. 8 oz. cream cheese softened
1 cup sugar
1 Tabl. vanilla
add one at a time 4 eggs
blend in 1/2 cup sour cream
BAKE IN A WATER BATHAT 300.
Preheat oven to 350 toast pecans on
baking sheet for 15 min, or until golden
brown cool. Reduce oven temp. to 300.
Combine;cracker crumbs and pecans in
food processer until fine. Set aside 2 Tabl.
Add ;butter and sugar to processor.
Pulse to blend.Spray sides and buttom
of cake pan with nonstick spray.Trace and cut
out roundof parchment to fit pan. Line
bottom with parchment circle. Spray
parchment and sides again.


Directions: Sprinkle reserved 2 Tabl. crumbs around sidesof pan. tilt and tap panto distridut crumbs evenly. With rubbre spatula, press remaining crumb-butter mixture onto bottom of pan. Heat water for waterbath. Cream; together cheese, sugar and vanilla until smooth.Add; eggs one at a time,beating well after each addition. Scrape bown sides and bottom of bowl frequently during mixing so that no lumps remain. Blend in sour cream.Back for 2-214 hours.

 

Apple pudding Cake

Preparation Time: 20 minutes

Ingredients:

2c. sugar
1/2 c. butter
2 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt 14 med. apples,chopped 4c.
1/2 c. chopped nuts
whipped cream or ice cream,if desired


Directions: Heat oven to 350. Greasa a 13x9 pan. Beat sugar, butter, eggs and vanilla in large bowl with electric mixer on med. speed until light and fluffy.Stir in flour, baking powder, cinnamon and salt. Stir in 4 c. apples and nuts. Spread batter in pan. Bake 55 to 60 minutes or until toothpick inserted in middle comes out clean. Serve warm with whipped cream or ice cream.

 

Banana Split Cake

Calories Per Servings: Many!

Ingredients:

2 cups graham cracker crumbs
1 stick soft margarine & 1 Tablespoon granulated sugar
2 eggs
2 sticks margarine
2 cups powdered sugar
3-4 bananas
1small can crushed pineapple,drained
1 8oz. container Cool Whip
Nut s and Marachino cherries to sprinkle on top {Optional}


Directions: Mix 2 cups graham cracker crumbs with 1 stick soft margarine and 1 Tbl sugar,then press into a 9X13 ich pan. In a bowl beat 2 eggs, 2 sticks margarine and 2 cups powdered sugar for 10 minutes.{ Important step }, then pour into crust. Slice bananas lengthwise and lay on top of cake. Drain pineapple and spread on top of bananas.Spread Cool Whip on top and sprinkle with choppedapprox nuts and drained chopped cherries if desired. Keep refrigerated. This cake is fabulous !!!!!!

 

Black Forest Pie

Preparation Time: 10 minutes
Number of Servings: 8

Ingredients:

1 (6 oz. )Graham Cracker Pie Crust
1 pkg. (8 oz.) cream cheese softened*
1/4 c. sugar
1/4 c. Cocoa
1 egg
1/4 tsp. almond extract
1 c. non- dairy whipped topping, thawed
1 can ( 21oz.) cherry pie filling chilled


Directions: Preheat oven to 350. Bake cream cheese until fluffy, add sugar and cocoa, mix well. Add egg and almond extract. With a spatula, scrape filling into crust, spread evenly. Bake 35 minutes. Cool and refrigerate. Just before serving, top with whipped topping and cherry pie filling. *Helpful Hint: Soften cream cheese in microwave on high 15 to 20 seconds. Chilling time 3 hours.

 

Bloody Mary

Ingredients:

1 1/2 ounces Vodka
3 Drops Tabasco sauce
3 ounces Tomato juice
Pepper to taste
1 Lemon; juiced
Pinch of salt to taste
1/2 teaspoon Worcestershire sauce


Directions: Shake with ice and strain into old-fashioned glass over ice cubes. A wedge of lime may be added

 

Margarita

Ingredients:

1 1/2 ounces Tequila
1 ounce Lemon or lime juice
1/2 ounce Triple Sec


Directions: Rub rim of cocktail glass with rind of lemon or lime, dip rim in salt. Shake ingredients with ice and strain into the salt-rimmed glass.

 

Frothy Midnight Mocha

Ingredients:

2 1/2 cups nonfat dry milk powder
1 cup sifted powdered sugar
1/2 cup unsweetened cocoa powder
1/4 cup instant coffee crystals
1/2 tsp apple pie spice


Directions: MOCHA MIX: In a 1-quart airtight storage container, combine milk powder, powdered sugar, cocoa powder, coffee crystals, and apple pie spice. Cover and shake well to mix. CUP OF MOCHA: Stir the mix. Place 1/3 cup of the mix in a blender or food processor. Cover. With blender or processor running, add 2/3 cup boiling water thru opening in lid or center feed tube. Blend or process until mixed and frothy.

 

LIME PUNCH

Ingredients:

1 large pkg. lime jello
1 cup sugar
2 cups boiling water
12 oz. can frozen orange juice
46 oz. pineapple juice
6 cups cold water


Directions: Dissolve lime jello and sugar in boiling water. Add remaining ingredients. Freeze;remove 2-3 hours before using. Add 2 bottles 7-up or Sprite just before serving.
