Broccoli Salad

Number of Servings: 6 - 8

Ingredients:

1 Bunch Broccoli
1/2 cup Onion
1 can water chestnuts
1/3 cup Raisins
1/2 cup nuts (peanuts)
Dressing
1 cup Mayonnaise
1/3 cup Sugar
1 Tablespoon Vinegar


Directions: Seperate Broccoli into small pieces. Chop onion,mix with water chestnuts raisins,& nuts. Mix dressing ingredients together and pour over vegetables. Chill at least 4 hours.

 

Italian Cucumber Salad

Ingredients:

2 medium cucumbres, peeled&sliced
1 cup tomatoes halved& quartered
1 cup sliced red onions
1/2 chopped green peppers
1/2 cup Italian dressing


Directions: In a large bowl, combine all the ingredients; cover and refrigerate until serving, serve with a slottod spoon.


 

Hot Chicken Salad

Ingredients:

2 cups cooked & boned chicken
1-1/2 cups chopped Celery
1/2 cup sliced almonds { I use Pecans }
1/2 tsp salt
2 tbs. lemon juice
2 tsp. grated onions
1 cup mayonaise
1/2 cup grated cheddar cheese
1 cup crushed potato chips


Directions: In large bowl put in the chicken, celery, & nuts. Mix in salt, lemon juice, onions,& mayonaise. Top with the cheese and potato chips. Place in 6-1/2 +10 pan and bake at 450 degrees for 15 to 20 minutes

 

Western French Dressing

Preparation Time: 15 minutes

Ingredients:

1 1/2 cup catsup
1 1/2 cup salad oil
1 1/2 cup sugar
1/4 cup vinegar
2 tsp.paprika
1/2 tsp.dry mustard
1 tsp. celery seed
2 tsp.garlic salt


Directions: IN Blender, put catsup, oil, and vinegar, blend at high speed to blend well, Add sugar and spices gradually, blend well. Pour into jars, and refrigerate. Makes 1 quart.

 

Mexican Pizza

Ingredients:

Pillsbury Pizza Crust, Rolled to fit 9X13 Pan
Salsa thick and chunky
Taco Cheese or Cheddar cheese
1lb hamburger meat, browned
green onions, sliced
black olives, sliced
sour cream


Directions: Put crust in 9X13 inch pan, spread salsa on crust, leave 1 inch around edge, sprinkle cheese over salsa, drain hamburger and put on top, add sliced olives and green onions. Bake at 425 for 20 minutes serve with sour cream on side to top the pizza with. VERY GOOD!

 

Crab Bisque

Ingredients:

1 celery rib, thinly sliced
1 small onion, chopped
3 Tbsp. butter/margarine
2 cans (14-3/4 oz.) cream style corn
1 can (19oz.) creamy potato soup with roasted garlic
1-1/2 cups milk
1-1/2 cups half and half cream
1 tsp. dried thyme
1/2 tsp. garlic powder
white pepper
16 oz. can crabmeat, drained, flaked and cartilage removed


Directions: In a fry pan sauté onions, and celery in butter/margarine till soft, then pour everything in crock pot, mix well and turn on low, till heated through and through, freezes well up to 3 month.

 

Frozen Hot Chocolate

Ingredients:

4 cups milk
½ cup sugar
¼ cup + 4 teaspoons cocoa powder


Directions: In a small bowl put cocoa powder and ¼ cup of the milk. Whisk with a fork until a paste is made. In a saucepan, bring the rest of the milk to a simmer. In a large bowl, add sugar and cocoa paste and stir together. Pour in hot milk and stir until completely combined. Cool completely in the refrigerator. Freeze according to ice cream machine manufacturer’s instructions.

 

Bacon Potato Chowder

Number of Servings: 6

Ingredients:

8 slices bacon, cut in 1 Inch pieces
2 cups 1/2 " cubed potatoes
1 cup chopped onion
1 1/4 cup milk
8 oz. sour cream
1 can Cream of chicken soup
8oz. can kernel corn, drained
1/4 tsp. each: pepper and thyme leaves


Directions: In 3 Qt. saucepan, cook bacon, add potatoes and onions, cook 15-20 mnutes til potatoes are tender, Do not drain bacon drippings. Add rest of ingredients, mix well and cook 10 - 20 minutes. Do not boil. Heat through, serve with a crusty bread .Yummy on a cold night.!

 

Creamy Chicken Ramen Noodle Soup

Ingredients:

1 package chicken flavored Ramen noodle soup
1can Cream of Chicken Soup


Directions: Cook Ramen noodles per pkg. directions but drain noodles after cooking. Prepare Cream of Chicken soup as directions on can. ADD seasoning packet from Ramen noodles to soup and mix. Add drained noodles and serve

 

Pasta Salad

Preparation Time: 45 minutes
Number of Servings: 12

Ingredients:

1 box San Giorgio tri-shaped pasta cooked
1 cucumber peeled & chopped
3/4 cup chopped celery
1/2 green pepper cut into strips
1/2 red or yellow pepper cut into strips
1 cup baby chuck carrots
1 cup broccoli florets
4 oz pepperoni sliced
3/4 block of cheddar cheese cut up
1 sm. can sliced black olives
2 Tbs. parmesan cheese
1 bottle good seasons Italian dressing
1 tsp. basil


Directions: Mix all ingredients & refrigerate 8 hours. Mix again just before serving and sprinkle with additional parmesan cheese
